Vegetable Stew Recipe
Ingredients:
- Mixed Vegetables (Chopped)
(Potato, Carrot, French Beans, Cauliflower, Sweet Corn) - 4 cups
- Onion (sliced) - 2 (Medium)
- Coconut oil - 4 tbsp
- Green Cardamoms - 4 nos
- Cloves - 4 nos
- Cinnamon stick - 1 inch
- Green Chilli (slit) - 2 nos
- Ginger cut into strips - 2 tspn
- Black Peppercorns coarsely crushed - 1 tsp
- Coconut Milk - 2 cups
- Water - 2 cups
- Curry leaves - 2 stem
- Salt - to taste
Preparation:
- Heat the oil in a pan on medium level till it is hot.
- Add the green cardamoms, cloves and cinnamon. Fry for a few seconds.
- Now add the green chillies, ginger and the sliced onions.
- Saute on medium heat for 2 minute or till the onions are transparent and soft.
- Add the mixed vegetables, curry leaves, salt and water.
- Cover and cook on low heat for 15 minutes or till the vegetables are cooked.
- Add the peppercorns and the coconut milk.
- Simmer on very low heat for about 1 minute.
- Serve with chapathis, puris, appams, rice or bread.
