Kerala Sambar Recipe

Ingredients:

  • Toor Dal/Tuvara parippu - 100gms
  • Sambar masala - 3 tbsp
  • Drumstick (medium sized) - 2 nos
  • Lady's finger (cut into small pieces) - 3 nos
  • Brinjal - 1 nos
  • Onion (Cut into 6 pieces) - 1 nos
  • Potato (peeled and cut into very small pieces) - 1 no (medium)
  • Curry leaves - 2 stalks
  • Coriander leaves (chopped) - 1 tbsp
  • Garlic (chopped) - 1 tbsp
  • Dried red chilli (cut into pieces) - 2 nos
  • Salt - to taste
  • Tomatoes (sized cut into pieces) - 2 nos (medium)
  • Tarmarind - size of a lime (soaked in 1/2 cup water)
  • Methi Seeds - 1/4 tbsp
  • Coconut oil - 2 tbsp
  • Asafoetidia - 1 tbsp
  • Mustard Seeds - 1 tbsp


Preparation:

  1. Cook the Toor dal/Tuvara parippu in two cups of water till it is half cooked.
  2. Now add pieces of drumstick, potato, brinjal, lady's finger, onion, tomato pieces, and salt.
  3. Cook furthur till the dal is completely cooked.
  4. Dissolve sambar masala in little water and add it to the cooked vegetables.
  5. Take the pulp of the soaked Tamarind and add, blend well and cook.
  6. Heat oil in a pan, splutter mustard seeds and fry chopped garlic, methi seeds, dried red chilli pieces, Asafoetida and curry leaves.
  7. Add to dal-vegetable mixture and boil it for 1 minute.
  8. Finally add chopped coriander leaves on the top.
  9. When the sambar begins to get thick, pour this over it and remove from fire.
