Erissery Recipe
Ingredients:
- Pumpkin - 2 1/2 cup
- Grated Coconut - 1 cup
- Red chilly powder - 1 tsp
- Turmeric powder - 1/2 tsp
- Pepper powder - 1/2 tsp
- Garlic - 1 clove
- Mustard seeds - 1/2 tsp
- Urad dal - 1/2 tsp
- Curry leaves - a few
- Cumin Seeds - 1/2 tsp
- Coconut oil - as required
- Salt - to taste
Preparation:
- Remove the skin of pumpkin dice and clean.
- Cook it in a little water with turmeric and red chilly powder and mash it.
- Meanwhile grind coconut, cumin seeds, garlic and pepper.
- Heat oil in a pan split the mustard, 1 tsp greated coconut, urad dal and curry leaves till it turns to brown.
- Then add mashed pumpkin, grinded paste and enough salt and mix well.
