Tomato Rice Recipe
Ingredients:
- Basmati Rice - 400 gm
- Red Tomato - 500 gm
- Coconut Milk - from 1 full coconut
- Grated onion - 1 large
- Green chillies (chopped) - 7 nos
- Cardamom - 3 nos
- Cinnamon piece - 1 no
- Cloves - 5 nos
- Star anise - 2 nos
- Gingelly Oil - 4 tbsp
- Salt - to taste
Preparation:
- Wash the rice and soak it for 30 minutes and then drain and keep aside.Puree the tomatoes adding coconut milk.Heat oil in the pan ,add all the spices and saute for a while.Then add onion and green chillies.Saute till brown.
- Add tomato puree- coconut milk mixture and salt into the pan.Now add the rice and cilantro and allow the rice to cook for 15 mts.(Add more water if needed).Add 1 tbsp of ghee and mix thoroughly.Switch off the stove and garnish with coriander leaves.
- Serve hot with papad and pickle.
