Kerala Pickle Recipes

Dry Mango Pickle Recipe

Ingredients:

  • Mango - 1 no
  • Red chilly powder - 1 tbsp
  • Mustard seeds - 1 tsp
  • Fenugreek powder - 1 tsp
  • Asafoetida powder - a pinch
  • Sesame oil - 4 tbsp
  • Salt - as needed


Preparation:

  1. Wash and clean the mango and cut it into small pieces.
  2. Sprinkle a lot of salt and leave it overnight.
  3. Heat oil in a pan. Add mustard seeds and fenugreek powder.
  4. When it starts to splutter, add chilly powder and asafoetida and stir well.
  5. Add the mango pieces and stir well. Remove from fire.
  6. Store in clean, dry air tight containers for future use.
