Kerala Mutton Recipes
Mutton Kuruma Recipe
Ingredients:
- Mutton - 1/2 kg
- Oil - 1/4 cup
- Cinnamon - 3 small pieces
- Cloves - 6 nos
- Cardamom - 3 nos
- Poppy Seeds - 1/2 cup
- Cashew nuts - 1/4 cup
- Grated Coconut - 1 cup
- Onions - 1/2 cup (chopped length-wise)
- Ginger crushed - 1 1/2 tsp
- Garlic crushed - 12 nos
- Green chillies - 4 nos
- Turmeric powder - 1/2 tsp
- Coriander powder - 2 tsp
- Chilly powder - 1/2 tsp
- Pepper Powder - 1 tsp
- Tomato (medium)- 1 no
- Curry leaves - a few
- Coriander leaves - a handful
- Salt - to taste
Preparation:
- Wash and cut the meat in small square pieces.
- Make a paste of poppy seeds, cahew nuts, cloves, cardamom and cinnamon stick.
- Also grind coconut and make a paste and keep aside.
- In a pan heat 2 tsp of oil and fry crushed garlic till it turn to brown. Keep aside.
- Heat oil in a pan. Add onions and fry till, they turn brown.
- Add ginger and green chillies and stir well.
- Add this to mutton pieces. Add salt and cook it well with enough water.
- When mutton is almost cooked, add turmeric, chilli powder and coriander powder and mix well.
- Then add popy seed paste and coconut paste and mix well. Boil it for few minutes.
- Add water if need be. Then add tomato cut in lengthwise and cook for few more minutes.
- When it is almost done add pepper powder and mix well. Add fried garlic and mix well.
- Add coriander leaves and curry leaves and cook for few more minutes.
- Mutton kurma is ready.
