Kerala Mutton Recipes

Mutton Cutlet Recipe

Ingredients:

  • Minced mutton (lamb) meat - 1 lb
  • Potato (medium) - 3 nos (boiled and mashed)
  • Onion (medium) - 1 (finely chopped)
  • Grated ginger - 1/2 inch piece
  • Garlic (crushed) - 2 cloves
  • Green chili - 2 (finely chopped)
  • Red chili powder - 1 tsp
  • Turmeric powder - 1/2 tsp
  • Garam masala - 1 tsp (optional)
  • Paper powder - 1 tablespoon
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Coconut oil - 3 tablespoons
  • Ghee - 1 tablespoon
  • Powdered bread crumbs - 1 cup
  • Egg - 2 nos (beaten)
  • Coriander leaves (finely chopped) - 1 cup


Preparation:

  1. Add the turmeric power, red chili powder and salt to the mutton and mix well. Set aside.
  2. Heat the ghee in a pan and fry the onion, ginger-garlic and green chili until the onion is golden colour.
  3. Add the seasoned mutton and cook for 10 minutes.
  4. Add garam masala, lemon juice and chopped cilantro and stir well.
  5. Cook for 5 more minutes. Remove from heat and allow it to cool.
  6. Add mashed potato and chopped coriander leaves to the meat mixture.
  7. Make lemon sized balls of the mixture and shape it into an oval or round shape.
  8. Dip this in the egg (beaten) and coat evenly with bread crumbs.
  9. Make the remaining cutlets in the same way.
  10. Heat the oil in a frying pan and fry few at a time until golden.
  11. Drain on paper powder and serve hot.
