Kerala Egg Curry Recipes
Egg Noodles Recipe
Ingredients:
- Plain noodles - 1 packet
- Egg - 1 no
- Onion - 1 medium
- Tomato juice - 2 tblsp
- Ginger-Garlic paste - 1 tsp
- Pepper powder - 1 tsp
- Chilly powder - 1 tsp
- Garam masala (hot spice mix) - ˝ tsp
- Coconut oil - 1 tblsp
- Salt - to taste
Preparation:
- Slice the onion into small pieces and keep it aside.
- Now take a big pot and pour ˝ liter water into it. Bring it to boil.
- When it is boiling add the noodles to it and then cook for three to five minutes.
- When the noodles are done remove from lame and drain all the water.
- Now take a frying pan and heat a little oil in it.
- When the oil is very hot add the onions and sauté till golden brown.
- Now add the ginger garlic paste, pepper powder, chilly powder, garam masala and fry briefly.
- Add the egg and scramble it till all the ingredients blend well with it.
- Pour in the tomato juice and cook for a minute.
- Sprinkle salt to taste and then add the noodles.
- Mix it all up and then remove from flame.
- Garnish with fried onions and serve.
