Kerala Chicken Curry Recipes

Garlic Chicken Recipe

Ingredients:

  • Chicken - 1 kg (cut into pieces)
  • Onion (thinly sliced) - 2 nos (large)
  • Green chillies - 6 nos
  • Ginger (peeled and crushed with a pestle) - 4 inch piece
  • Garlic pods (peeled and crushed with a pestle) - 12 nos
  • Curry leaves - 2 stems
  • Coriander leaves (chopped) - 2 bunches
  • Cumin seeds(Jeerakam) - 2 tsp
  • Mustard seeds - 1 tsp
  • Turmeric powder - 3/4 tsp
  • Chilli powder - 3 tsp
  • Garam masala powder
  • Vegetable Oil - 1/4 cup
  • Lemon - 1 no
  • Salt - As reqd


Preparation:

  1. Marinate the chicken pieces with salt, turmeric and chilli powder and lemon juice. Set aside the marinated chicken for half an hour to an hour.
  2. Take a deep bottomed vessel and heat it.
  3. Add oil to the vessel.
  4. Once oil is heated, add mustard and cumin seeds.
  5. After seeds splutter, add one stem of curry leaves.
  6. Add the crushed garlic and ginger and fry them till the raw smell leaves.
  7. Once the garlic turns mild golden color, add the onions.
  8. Fry onions till they are golden brown.
  9. Add the chillies and fry for a while.
  10. Add the marinated chicken and fry for 20 seconds.
  11. Cover the vessel and cook for 10 mins.
  12. After 10 mins, add 2 tsp of garam masala and stir in well.
  13. Add salt as per taste.
  14. Cook the dish uncovered, till most of the liquid has evaporated.
  15. Before removing from flame, add the remaining curry leaves, lemon juice and the chopped coriander leaves.
  16. Serve hot with chappathi or hot rice
