Beef Stew Recipe
Ingredients:
- Beef(stew meat) - 1 1/2 kg
- Potatoes - 1 cup
- Carrots - 1 cup
- Green peas - 1 cup
- Ginger - A small piece
- Onion(large) - 1 no
- Garlic pods - 6 nos
- Green chillies - 6 nos
- Curry leaves - A few
- Oil - 1 tsp
- Chilly powder - 1 tsp
- Turmeric powder - 1/2 tsp
- Ground pepper - 1/2 tsp
- Coriander powder - 1 tsp
- Ginger-garlic paste - 2 tsp
- Coconut milk - 4 cups
- Vinegar - 2 tbsp
- Salt - As reqd
For grinding:
- Cinnamon(Karugapatta)
- Cardamom(Elakka)
- Nutmeg(Jathikka)
- Peppercorns(Kurumulaku)
- Fennel seeds(Perinjeerakam)
- Cloves(Grambu)
Preparation:
- Cut stew meat and wash thoroughly. Drain the excess water off
- Add chilly powder, salt, turmeric powder, pepper powder, ground spices, ginger-garlic paste
- Pressure cook the meat, till it is done
- Cut potatoes and carrots into very small pieces
- Steam the potatoes, carrots and peas with salt
- Extract coconut milk. Keep the first extract aside
- Make 2 more extractions
- Heat oil in a pan
- Saute curry leaves, green chillies, garlic, ginger and onion
- Add coriander powder
- Add the cooked vegetables and fry for a minute
- Add this to the meat and mix well
- Add the second and the third extractions of coconut milk
- Add 1 cup of water and bring to a boil
- Add the first extracted milk
- When the sides start boiling, add vinegar. Do not let it boil.
- Remove from flame
- Serve hot with appams, rice, chappathi or bread
