Christmas Cake

Christmas is incomplete without delicious cakes. The mention of Christmas brings the sweet smell of cakes. The Christmas season brings different varieties of new cakes. These cakes are specially made for Christmas. Sure this festival is for the Christian community but other people also relish these Christmas cakes in the festive season

As the Christmas approaches, streets are spread with the fragrances of mouth-watering Christmas cakes. This intoxicating smell evokes the festive spirit in people and augments the mood of the grand fiesta. Without Christmas cakes, one cannot think of celebrating Christmas with full fervor. In most of the homes, you will find cakes on Christmas. Some people prepare cakes on Christmas on their own while some people prefer to buy the cakes from the market on Christmas.


CHRISTMAS CAKE RECIPE

Ingredients

• 1 cup cherries (cut into small pieces)
• 1cup dried citrus peel
• 2 cups raisins
• 1 cup dates, pitted and chopped
• 1 cup almonds
• 1/2 cup brandy
• 1/2 cup all-purpose flour
• 2 cups all-purpose flour
• 1/2 teaspoon baking soda
• 1 teaspoon ground cloves
• 1 teaspoon ground allspice
• 1 teaspoon ground cinnamon
• 1/2 teaspoon salt
• 1 cup butter (dalda)
• 2 cups packed brown sugar
• 6 eggs

Method

Mix cherries, citrus peel, raisins and almonds in a bowl with ½ cup brandy and leave for 3 hours.  Dredge soaked fruit with 1/2 cup flour
In another bowl mix well the remaining flour, baking soda, cloves, all spices, cinnamon and salt.
Take butter in a large bowl and add eggs one by one and beat well. Also add brown sugar. To this add the prepared flour mixture and fruits alternatively and stir well.
Grease the cake pan with butter, line it with butter paper and grease it again with butter. To this pan put the cake mixture half filled and cook in 275degrees preheated oven till it is baked fully. Or until a small knife inserted into the center of cake comes out clean.


CHRISTMAS SPECIAL FRUIT CAKE

Ingredients

• 2 cup condensed milk
• Butter (dalda 1 cup)
• ½ cup raisins
• 1 cup cherries chopped
• 1 cup dried citrus peel
• 1 cup dates chopped
• 1 cup almond chopped
• 2 cup flour
• 1 teaspoon ground cinnamon
• 1 tsp baking soda
• 2 eggs
• Vanillas extract 1 tsp

Method

Pour the condensed milk into a pan and add fruit, cherries, dates, citrus peel, almond and raisins. Place over a low heat until the condensed milk has melted. Stir well and remove from heat and leave to cool.
Mix butter and flour well and add eggs one by one and add baking soda and mix it well. To this mixture add prepared cooled fruits mixture and bled it well.
Half fill mixture into a cake pan greased with butter, and cook it in 150 degrees pre heated oven for 2 hours or until a small knife inserted into the center of cake comes out clean.
